Fall’s Ultimate Comfort Dish

Brace yourselves for a feast! Introducing a savory delight – scallop potatoes, all dressed up in crispy bacon wrapping. A delightful twist on a classic favorite.

This fall, savor the rich flavors of bacon-wrapped scalloped potatoes, a perfect blend of creamy potatoes, melted cheese, and crispy bacon. Enjoy alongside a glass of Chardonnay, which enhances the creamy and smoky flavors of the dish with its fleshy fruit and oak notes.

Ingredients

Serves 12 people

Ingredients:

3 lb White potatoes, peeled

1 L 35% Heavy whipping cream

4 oz Grated parmesan cheese

20 Slices bacon

Salt and pepper to taste

Method

  1. Using a mandolin or slicing attachment on food processor, slice potatoes into a large bowl and top with cream.
  2. Add cheese, salt and pepper and mix well.
  3. In a deep loaf pan lined with parchment paper and bacon, making sure bacon overlaps and hangs over the edge of the pan.
  4. Top with potato and cheese. Make sure potatoes are at least 3 inches high.
  5. Fold the bacon over to cover the potatoes. Cover with parchment paper and foil.
  6. Cook in oven at 350° F for at least 90 minutes or until it feels tender with a fork.
  7. Remove from the oven and remove the foil, but leave the parchment in place.
  8. Place a second pan on top of the foil and add 3 large cans as weights.
  9. Allow to cool in refrigerator with weights over night.
  10. Remove from loaf pan and slice into desired portions. 
  11. Place on a baking sheet to heat up and crisp the bacon.

Wine Pairing – 2020 Flat Rock Rusty Shed Chardonnay

I highly recommend the 2020 Flat Rock Rusty Shed Chardonnay. This beautifully oaked wine pairs exceptionally well with bacon-wrapped scalloped potatoes. Barrel fermented, it boasts notes of melon and fleshy fruit, complemented by spicy oak and a creamy mouthfeel.
